We had Evan's godparents over for dinner last night and I tried out a new recipe. Spice rack chicken and roast potatoes.
-4 chicken breasts, skinless
-4 large potatoes, scrubbed
-salt and pepper
Slice your chicken into thick strips. In a ziploc bag or sealable container, mix a good glug of olive oil, garlic, ginger, salt, pepper, sugar and soy sauce. I used about a heaped teaspoon or so of the seasonings to about a couple tablespoons of oil. Eyeball it, use as much as you like, rock what you got so your chicken is covered but not swimming in oil. Set aside to marinate.
Grab yer spuds and chop into 1" pieces. Put on a plate, over with plastic wrap or a plate cover and microwave for 8-10 minutes or until easily pierced with a knife.
While spuds are cooking, get a skillet and dump in the chicken and marinade. Cooking over medium heat until cooked through and it smells yummy, stirring often.
While the chicken is going its thing, in a bowl, mix some oil garlic chili and salt to taste before adding spuds. Toss to coat and pour onto foil lined cookie sheet or baking dish. Put spuds on highest oven rack and bake at 425*F until golden.
I served it all with some spaghetti sauce spiked with a bit of chili and the salad Evan's godmother made. It turned out pretty good! I'll be upping the spices next time as there wasn't quite enough kick for my liking.
