WFD? What's For Dinner at your place?

I've made these before and they're fantastic. Here's how I made them tonight.

Grab a mixing bowl, a small spatula, some minced garlic, salt and pepper, some green stuff from your spice rack (I used basil and oregano), a muffin pan, some spray oil, some ricotta (I used 2 tubs, 250grams each, 8ounces in American), a jar of spaghetti sauce, some mozzarella cheese and wonton wrappers. I use the square ones as they provide a little bit of a handle to grasp onto when removing from the pan.

Plop all the ricotta into your mixing bowl and mix with the garlic, green herbs, salt and pepper, and if you like things on the spicy side, a bit of chili.

Wrappers!
Spray your muffin tin and put a wonton wrapper in each hole. Add a dollop of your your yummy smelling ricotta mix and smear the bottom. Add some spaghetti sauce and another wonton wrapper. Repeat with ricotta and sauce and finally some shredded mozzarella. Bake at 400*F (200*C) for about 20 minutes until the cheese is bubbly and golden and the tips of the wrappers are brown.
If you have a 12-hole regular size muffin tin, use it! Or use two 6-hole tins. Using one 6-hole is a bit of  a pain.
Let cool on a wire rack so you won't burn your mouth off and to let the wrappers crisp up a bit before serving. The ricotta mix makes quite a few of these and I recommend getting a couple packets of ricotta and the wrappers. Make a few batches for lunches and snacks through the week. Would also be great for a mini-food dinner party or a kids party. Great for portion control too.

You could add meat to your sauce if you wanted, or some spinach to your ricotta.... whatever floats your boat. I chose not to do meat as that meant another pan and spoon to wash and today I'm lazy. :p

Try them and see what you think! More accurate measurements can be found here but since I've made these before, I just eyeball things and go with whatever I have on hand.
